200 g flour (7 oz)
100 g butter (3.6 oz, 82%, cold)
50 g eggs (1 egg)
20 g egg yolk (1 yolk)
4 g of baking powder (1 tsp.)
pinch of salt
5 g sugar (1/2 tsp.)
20 g dried tomatoes (0.7 oz)
1/2 tsp. Provençal herbs
50 g parmesan (1.8 oz)
🍪Prepare the dough.
1. Mix together the flour, baking powder, sugar, salt, and proverbial herbs.
2. Grate the butter into the flour with a fine grater, also grate the Parmesan. Stir to combine.
3. Add the sun-dried tomatoes, egg and egg yolk and knead the dough.
🍪Prepare the cookies.
1. Roll the dough into a sausage shape about 3 to 4 cm in diameter.
2. Wrap it in cling film and leave in the fridge for a few hours.
3. Remove the clingfilm from the dough and cut into 0.5 cm thick slices.
4. Place the dough circles on parchment, send to bake in a preheated oven to 350F for 15-18 minutes.
