Recipe and ingredients:
2 tbsp (14 g) psyllium.
1.5 tsp (7 g) baking powder.

1 tsp (5 g) xanthan gum.
6 large eggs, separated into whites and yolks, at room temperature.
8 oz (227 g) full-fat cottage cheese (4-5% fat).
chop and mix with an immersion blender.
1/4 cup (56 g) butter, room temperature.
1/4 cup (60 ml) neutral MCT oil.
1 tbsp (15 ml) apple cider vinegar.
add dry ingredients.
beat egg whites until stiff peaks form.
1/4 cup (28 g) dry albumen.
add egg whites gradually, 1/3 at a time.
grease a baking pan with vegetable oil.
sprinkle with sesame seeds.
Bake for 35-40 minutes at 325°F (165°C).
