Asian Chopped Salad
I bag slaw mix
1 medium red bell pepper, cut into thin strips
1 medium yellow bell pepper, cut into thin strips
1 cup shredded carrots
½ red onion thinly sliced
1 cup sugar snap peas, chopped
3 green onions, chopped
1 bunch of fresh cilantro, chopped
2 tbsp sesame seeds
1/2 cup peanuts, toasted and chopped
1/2 cup crispy chow mein noodles, or wontons strips
Mix together and toss in dressing.
Dressing
Combine all ingredients in a mason jar and shake or in the blender and blend.
4 tbsp sesame oil
4 tbsp rice vinegar
2 tbsp honey
2 tbsp lime juice
2 tsp fresh ginger, peeled and grated
1 tsp salt, or added to taste
1/2 tsp ground black pepper, or added to taste
Makes six servings
Each serving with dressing is
250 calories
18g fat
21g carbs
4g fiber
5g protein
Add 4oz cooked chicken breast each serving becomes:
440 calories
22g fat
21g carbs
4g fiber
41 g protein
