Breakfast burritos

8 regular flour tortillas or 8 low carb tortillas
6 whole eggs
1.5 cup low fat cottage cheese
30 tbsp egg whites or about 1.75 cups
1 cup shredded mexican cheese
16 chicken sausage links I use this brand
Diced ½ pepper and ½ onion or any veggies you want to add
8 oz Extra shredded cheese for each burrito
Salt and pepper to taste

Start by making your egg mixture.
Spray casserole dish with no stick oil, mix together 6 whole eggs, egg whites, diced veggies, 1 cup shredded cheese and salt and pepper. Place on baking pan and bake at 350 for 20-30 mins.

While that cooks, heat up your sausage links so that you can cut them half.

Once your egg mixture is done, let it cool for 15 mins then flip out of pan and cut into 8 equal portions. Now time to assemble your burritos. Add one serving of egg mixture, 2 sliced in half sausage links and 1 oz shredded cheese. Roll up and place on baking sheet. Repeat this 7 more times. Then bake your burritos for 15-20 mins or until golden brown. You can eat them immediately or let them cool, wrap in parchment paper and place in freezer safe baggies and freeze them for later. To reheat, pull out burrito the night before and place in refrigerator to thaw. Next morning bake or sir fry the burrito for 15-20 mins or until completely reheated. The are best reheated in an oven or air frier vs the microwave.
