Brown rice bowls topped with a variety of yummy things, and drenched in a heavenly tahini dressing are hearty, healthy and so delicious. It's easy to create this at home for a fraction of the cost of the grain bowls at Freshii or Chipotle (or other fancy takeout places).
The tahini dressing will take this simple brown rice bowl over the top in deliciousness!
In this video, I add tofu, feta, cherry tomatoes, spinach, mint, basil, hemp hearts and toasted almonds but feel free to use these brown rice bowls as a canvas and use what you have on hand and what you like. Just make sure you have some protein and crunch to make it satisfying and interesting in texture.

Brown Rice Bowls with Creamy Tahini Dressing

Serves 2
Tahini Dressing:
½ cup tahini
2 tablespoons fresh lemon juice
2 teaspoons maple syrup
⅛ teaspoon garlic powder
⅛ teaspoon salt
⅓ cup water
Brown Rice Bowls:
2 cups Big-Batch Whole Grains (thawed and/or reheated)
Suggested toppings: Cooked chicken, tofu, beef or shrimp; roasted vegetables; fresh vegetables; sliced avocado; fresh arugula or spinach; crumbled feta; chopped toasted nuts; hemp hearts or chia seeds; fresh basil or mint.
1. Whisk the tahini with the lemon juice, maple syrup, garlic powder and salt. Whisk in the water. Reserve.
2. Divide the grains between 2 bowls. Top however you like. Drizzle with some of the tahini dressing. Sprinkle with nuts, seeds and herbs.
