Sausage and Bean Stew | Cozy & Healthy One-Pot Wonder
This hearty Sausage and Bean Stew is my husband's favourite recipe out of every recipe I have ever developed.
It definitely fits in the category of comfort food but is also incredibly good for you.

Sausage and Bean Stew

Serves 4
INGREDIENTS
1 tablespoon canola oil
4 sausages (such as Italian or Bratwurst)
4 cups chopped kale or rapini
¼ teaspoon salt
4 cups Brothy Beans*, thawed
Extra-virgin olive oil
Shaved Parmesan
INSTRUCTIONS
1. Heat the oil in a large frying pan over high. Add the sausages and cook for about 4 minutes, or until they are golden on the bottom.
2. Flip the sausages, reduce the heat to low and add the kale or rapini.
3. Cover and cook for 5 to 8 minutes, or until the kale softens. Sprinkle with salt.
4. Add the beans and simmer gently, covered, until bubbly, about 10 minutes. Serve drizzled with extra-virgin olive oil and sprinkle with shaved Parmesan.
You can use plain canned beans instead but these Brothy Beans take this whole recipe to the next level (it's the brothy part 😍 that's the secret!)
