Peanut Butter Pie
Crust:
2/3 cup graham cracker crumbs
2 Tbsp sugar
2 1/2 Tbsp butter, melted
Filling:
2 oz. cream cheese, softened
1/2 cup powdered sugar
2 Tbsp milk or half and half
1/2 cup creamy peanut butter
1/2 tsp vanilla extract
3/4 cup heavy cream (1/2 cup additional for garnishing top)
Peanut Butter Cup optional for garnish
Whipped Cream Topping:
1/2 cup whipping cream
2 tsp sugar
1/2 tsp vanilla.
Directions:
Crust:
Combine crumbs, sugar and butter and mix to combine. Should resemble wet sand.
Press half of mixture into two 5 inch pie tins.
Bake at 350 degrees F for 7-8 minutes or until golden brown around the edges.
Filling:
In a bowl, using an electric hand mixer, beat cream cheese with powdered sugar until light and fluffy.
Add in milk, peanut butter and vanilla.
In another bowl, beat whipping cream until it holds a stiff peak.
Add one third of whipped cream into peanut butter mixture. Then fold in remaining whipped cream
Pour filling into two pie crusts.
Whipped Cream:
In a small bowl combine 1/;2 cup whipping cream, sugar and vanilla. Whip until stiff peaks form.
Garnish top of pie with whipped cream and chopped peanut butter cup.
Refrigerate for at least 4 hours or overnight.
Garnish top with some additional whipped cream and chopped peanut butter cup.
