Peach Crumb Bars | Small Batch |Feeds 2-4 people

It's peach season and peach crumb bars are the perfect way to celebrate! A buttery cookie base, fresh peaches and then a crumbly streusel topping. It's a cross between a peach pie, crisp, crumble and butter cookie!

Ingredients:
1/4 cup granulated sugar
1/4 tsp baking powder
3/4 cup all purpose flour
pinch of salt
4 Tbsp butter, salted and cold.
1 - 1 1/2 Tbsp beaten egg
1 1/2 - 2 cups peaches, peeled and diced (about 2 peaches)

Directions:
In a bowl combine sugar, baking powder, flour, salt and butter. Use a pastry blender to blend in the butter until the butter is small pieces..
Add in egg, starting with 1 Tbsp and add a bit more if needed, just to slightly dampen the crumb mixture. You still want it crumbly but it will come together when pressed into bottom of pan.
Press half of the crumb mixture into the bottom of a parchment sling lined 9 x 5 inch loaf pan.
Bake at 350 degrees for 15 minutes.
Top with diced peaches.
Sprinkle with remaining crumb mixture.
Bake in a 350 degree F oven for 25-30 minutes or until topping is lightly golden brown on top.
