Key Lime Bars | Small Batch
These key lime bars have a buttery shortbread base topped with a tangy lime filling and then a sweet lime frosting on top. The perfect amount for 1-4 people.

Small Batch Key Lime Bar Ingredients:
Shortbread Crust:
1/4 cup plus 3 Tbsp all purpose flour
3 Tbsp butter, salted, softened
1 Tbsp granulated sugar
Filling:
6 Tbsp granulated sugar
1 egg
1 Tbsp flour
1 1/2 Tbsp key lime juice
1/8 tsp baking powder
Frosting:
1/2 cup powdered sugar
1/2 Tbsp butter, salted, softened
1 Tbsp key lime juice
Directions:
Crust:
In a bowl combine flour, butter, and sugar. Mix until the crust resembles coarse crumbs.
Press into the bottom of a 9x5 loaf pan that has been lined with parchment paper.
Bake at 350 degrees F for 15 minutes of until edges are just beginning to turn golden brown.
In another bowl combine filling ingredients including sugar, egg, flour, key lime juice and baking powder.
Pour filling over hot partially baked crust. Return to oven for 12- 15 minutes or until filling is set and beginning to lightly brown around edges.
In a bowl combine frosting ingredients, stir until smooth.
Cool bars completely and then frost.
