Zucchini Muffins are tender and delicious with a yummy glaze on top for extra sweetness. The perfect solution to too much zucchini!

Muffin Month

Ingredients:
1/4 cup melted butter, salted
3 Tbsp brown sugar
3 Tbsp granulated sugar
1 egg
1/4 tsp vanilla extract or almond extract
2 Tbsp sour cream or plain Greek yogurt
2 Tbsp milk
3/4 all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup grated zucchini, do not need to peel.
Glaze:
1/2 cup powdered sugar
lemon juice

Dierctions:
In a medium size bowl combine melted butter, sugars, egg, extract, sour cream and milk. Stir to combine.
In another bowl combine flour, baking powder, salt and cinnamon.
Make a well in the middle of the dry ingredients and pour in wet ingredients.
Stir just until the dry ingredients are almost all incorporated.
Add in zucchini and stir just until combined.
Use a 1/3 cup muffin scoop and fill a muffin tin that has been lined with cupcake liners or greased well.
Bake at 425 degrees F for 5 minutes and then turn down oven heat to 350 degrees F and bake for another 8-9 minutes or until a toothpick comes out clean.
Allow muffins to cool.
Make the glaze by combining powdered sugar and lemon juice in a bowl. Add just enough lemon juice to make a nice drizzling consistency.
Drizzle glaze over cooled muffins. Enjoy!
