Oven Braised Chuck Roast
2 Tbsp Avocado Oil
4 - 5 lb Chuck Roast
3 Yellow Onions - sliced
5 - 6 Cloves Garlic - smashed
1/2 tsp Dried Thyme
1/2 tsp Ground Coriander
Salt & Pepper to taste
3 Bay Leaves
1 Tbsp Apple Cider Vinegar
1/2 C Water
Gravy
2 Tbsp Corn Starch
2 Tbsp Water
Season roast on all sides. Heat an oven proof skillet with oil.
Sear meat on ass sides. Remove from pan and set aside
Add apple cider vinegar to pan, onions, thyme, coriander, garlic, salt & pepper.
Stir until coated. Stir in garlic and place meat on top of onions. Add in the bay leaves and water.
Cover and bake @ 325 F for 4 - 5 hours or until fork tender.
To make gravy, stir water into corn starch. stir into juice from the roast to thicken
the sauce. If too thick add more water or broth.
Serve over mashed potatoes
