Easy 3 Ingredient Giant Scone Cake with Peaches & Raspberries | No Egg, Butter or additional Sugar
I have a delightful scone recipe to share with you today. It's a Giant Scone Cake featuring raspberries and peaches. Perfect for brunch and makes an easy, delicious treat for when you have company.
This is a scone cake that is best served immediately after assembly as there is a layer of whipped cream, some raspberry jam, and sliced peaches. Enjoy it with a cup of coffee for the perfect breakfast or dessert!
What is Self Rising Flour?
Self-rising flour is just All Purpose flour with baking powder and salt added to it. The regular Self Rising Flour is available in the market but for Gluten free Self Rising Flour you make it yourself as I did for this recipe.

Ingredients
2 1/2 cup (350 g) Gf Self Rising flour ( 2 1/2 cup Gf all purpose flour + 3 3/4 tsp baking powder + 1/2 tsp salt)
1 cup (250 ml) lemonade (do not use sugar-free varieties)
1 cup (250 ml) cream
Zest from 1 lemon (optional)
Add ins
2 ripe peaches ( Cut 1 into bite size pieces and other one thinly sliced)
1/2 cup raspberries
2-3 tbsp (+) Raspberry jam
1 cup (250 ml cream
