In this episode we are going to make Italian chicken cutlets (Milanese). There are a few tricks to making a good cutlet and today we'll go over all of them. I'll show you how to make a flavorful seasoned breadcrumb mix loaded with Parmigiano-Reggiano cheese. We'll also go over fileting and pounding out the cutlets and how to fry the chicken until it's golden and delicious! Also, don't forget to make the dish at the end with the juicy fried cutlets. That one is a keeper!

INGREDIENTS:
▪4-6 thin-sliced chicken cutlets
▪3 eggs
▪1 1/2 cup plus Italian seasoned
breadcrumbs (or make own)
▪1 cup plus olive oil
▪flour to coat
▪1 tsp kosher salt (will need more salt if you make own breadcrumbs)
▪1/2 tsp black pepper
