3 pounds (1362g) New potatoes or Yukon Gold
6 ounces thick-cut bacon - diced
1/4 cup (58g) neutral oil - vegetable, canola, avocado, etc.
1 cup (200g) minced onion
1 cup (200g) shredded carrot
1/2 cup (120g) white vinegar
1/2 cup (120g) water
5 tablespoons (60g) granulated sugar
1 1/2 (8g) teaspoons fine sea salt
1/4 teaspoon white pepper
2 tablespoons flat-leaf Italian parsley - for garnish
2 tablespoons chives - for garnish
