How to make Italian Sausage Calzones. Homemade Dough and Pasta Sauce.

Dough:
2 cups of either bread flour or all-purpose flour Plus: 1/2 to 3/4 cup of extra flour for kneading.
1 tsp salt
2 tsp sugar
2 tbsp olive oil
1 envelope instant yeast
1 cup warm water
Let dough rise for 30 to 40 minutes inside the oven with only the light turned on.
LET THE DOUGH DOUBLE IN SIZE

Marinara sauce:
1/4 onion
2 garlic cloves
1 tbsp olive oil
2 / 14 oz cans diced tomatoes
2 / 8 oz cans tomato sauce
6 oz tomato paste
1 tsp salt, pepper, oregano, parsley flakes

1 lb cooked Italian sausage

Shredded mozzarella cheese
Extra olive oil to brush on top of the Calzones
I baked these Calzones at 350 degrees for 30 minutes.
