2 Cups cooked rice, day old (Jasmine and Calrose 1:1 ratio)
2 eggs scrambled
1 medium carrot, diced
1 white onion, diced
1/2 to 1 cup frozen peas
3 cloves garlic, minced
Salt & Pepper
1 lb chicken breast, sliced
1/2 cup green onions, diced
Safflower or peanut oil
Chicken Marinade:
1/2 tsp sugar
1/2 cornstarch
1/4 tsp kosher salt
1/4 tsp MSG
1/2 tsp light soy sauce
1 tsp peanut oil (or any neutral oil)
1/2 tsp baking soda

1/2 tsp sugar
1/2 tsp dark soy sauce
2 tsp light soy sauce
Seasoning Mix:
1/2 tsp MSG
1 tsp Kosher salt
1/2 tsp white pepper
Optiona:
2 tsp shaoxing wine
1 tsp toasted sesame oil
