Third in line, after Bulgarian yoghurt and white cheese, lyutenitsa has a steady presence at the dining table - be it as a side to a meat dish or spread on a slice of bread. An ideal breakfast or a mid-day snack, packed with vegetable goodness and in this case - without any added sugar.

Best made to a rough texture in an old-school meat grinder.

INGREDIENTS:
1 kg (2.20 lbs) sweet paprika
1.2 kg (2.64 lbs) tomatoes
300 gr (0.66 lbs) carrots
300 ml (1 1/4 cups) water
2 eggplants
80 ml (1/3 cup) olive oil
1 Tbsp vinegar
black pepper
sea salt

ПРОДУКТИ:
1 кг чушки
1.2 кг домати
300 гр моркови
300 мл вода
2 патладжана
80 мл зехтин или слънчогледово олио
1 с.л. оцет
черен пипер и сол на вкус
