Greek Chicken in the Crockpot | Easy Spring Crockpot Meal
Greek Chicken in the Crockpot
Marinade:
lemon zest of 1 lemon
juice of 1 lemon (reserve lemon quarters)
2 tsp dried oregano
1 tsp garlic powder
1 1/2 tsp kosher salt
3/4 tsp black pepper
1/2-2/3 cup extra virgin olive oil
6-8 yellow potatoes, cut into pieces
2 garlic cloves, roughly chopped
(salt & pepper to taste at end)
1 lb chicken breast
1/2 cup freshly grated romano or parmesan cheese
fresh cilantro or parsley
fresh lemon slice
Cook for 5 hours on low or until chicken and potatoes are cooked thru. Add cheese, herbs, lemon slice, and salt and pepper to taste right before serving.
To use as a marinade for the grill, mix marinade as described and place in covered container in refrigerator with chicken for 30 min, up to 1 hour. Do not leave to marinate for more than 1 hour as the lemon juice starts to cook the chicken and makes for a strange texture. Cook chicken on the grill on low-medium heat and enjoy with your favorite sides (potato packet cooked alongside on the grill and grilled veges are great with this!)
