Curd Stollen 🍞✨
200 g butter (7 oz softened butter)
150 g sugar (1/3 lb)
200 g cottage cheese (7 oz, 5-9% fat content)
100 g eggs (2 eggs)
lemon peel
orange zest
10 g of baking powder (0.4 oz)
500 g flour (17.8 oz)
250 g light raisins (8.9 oz)
200 g dried blueberries (7 oz)
150 ml of black rum (5 fl.oz)
Optional:
200 g melted butter (7 oz)
200g powdered sugar (7 oz)
🍇Prepare the dried fruit.
1. Rinse raisins and blueberries: pour boiling water for 1 minute, drain and rinse under cold water.
2. Fill the dried fruits with rum, cover with clingfilm and leave overnight.
You can use the microwave: heat dried fruits with rum for 30-40 seconds, stirring occasionally.
3. Strain the dried fruit in a sieve and let the rum drain.
🍞Prepare the dough.
1. Mix melted butter, lemon and orange zest and whisk.
2. Add the sugar and mix again.
3. Add the eggs and cottage cheese and mix again.
4. Combine the flour and baking powder and mix with the curd mixture.
5. Add the soaked dried fruit to the batter and mix.
6. Divide the dough into 3 portions and form the stollen.
7. Place on parchment and send to bake in an oven at 350F for 40-45 minutes.
8. Brush the hot stollen with melted butter on all sides, then sprinkle with powdered sugar.
