22 ounces crusty bread, about 12 cups, diced. Try to use half white and half whole-grain bread.
¼ cup extra virgin olive oil
1 large onion chopped
2 carrots chopped
3 stalks of celery chopped
1 leek sliced
4 cloves garlic minced
1 teaspoon rosemary dried or fresh chopped
1 teaspoon sage dried or fresh chopped
½ teaspoon thyme dried or fresh chopped
1 teaspoon salt
⅛ teaspoon black pepper
3 cups vegetable broth, more or less, depending on your bread
4 tablespoons parsley fresh, chopped
