The "dwarf" name comes from the size of the plant, not the fruit.
In fact, some varieties will produce so much that they branches will get weighed down and snap.
It's your job to harvest early and often. When the tomatoes have shown their final color and have a little bit of give, they can be pulled.
Of course, if you can allow the fruit to fully mature on the vine, you're going to get the best flavor.
