Herring mousse on Borodino bread chips

▫ Small beets - 1 piece
▫ Borodino bread or thin bread - 50 g
For the mousse:
▫ Herring fillet - 100 g
▫ Cream 30-33% fat - 50 ml
▫ Butter - 25 g
▫ Gelatin - 5 g
Preparation:
Cut Borodino bread into thin slices, sprinkle with vegetable oil, and dry in the oven at 80 degrees until crispy chips form. Or use thin crispbread.
Wash the beets, wrap in foil and bake in the oven at 200 degrees for about 1 hour. Or boil it. Rinse with cold water, cool, and clean.
Soak the gelatin in the cream and heat until the gelatin melts. Add butter. Mix the cream mixture with herring and blend with a blender until smooth. Place in the refrigerator for 3 hours.
Then beat the herring mass with a mixer until fluffy and transfer it to a cooking bag. Roll the beets as shown in the video into “pounds”. Place a little mousse on each “pound”. Place a little mousse on the Borodinsky “chips”, and on it a beetroot “pound” with herring mousse. Decorate with greens.
