Within the View menu is the toggle, Pixel Preview. When active, Illustrator will simulate on screen what rasterised graphics, such as an exported JPG or PNG, will look like. When Pixel Preview is inactive, vectors will be shown crisp and sharp regardless of the magnification.
Keyboard shortcut
Mac: Option + Command + Y
Windows: Alt + Control + Y
When in Pixel Preview, Illustrator will display "Pixel Preview" along with the name in the tab for the file.
When creating a new file, there is a Preview Mode option within the dialog box that is generally set to Default. If set to Pixel Preview, this mode will be on at file creation. It can be easily toggled off/on using the methods previously outlined.
