Photoshop Preferences
The Photoshop Preferences can be found within the Photoshop menu on a Mac and the Edit menu on Windows. Within the Interface tab is an Appearance Section.
Color Theme:
The 4 buttons alter the user interface between modes ranging from dark through to light.
Standard Screen Mode (Color):
This drop down menu allows for the color that surrounds a Photoshop document to be changed. A range of default options exist as does Custom color. This Custom color can be altered to any value by choosing Select Custom Color.

Changing Background Color Outside of Preferences
Right mouse clicking on the colored area that surrounds a Photoshop document brings up a menu. The contents of this menu are the same as the Standard Screen Mode (Color) option within the Preferences.
