What I eat in a week(end) VEGAN waffles, rice noodle salad, green juice, chickpea scramble
Heyyy y'all! Welcome back to another what I eat in a week(end). Tbh I was too lazy to record the full week so I dedicated myself to this one weekend hah. This weekend was filled with new recipes, well seasoned food, and happiness. Only thing is I will never eat another full pint of vegan ice cream in one sitting again because it made me bloated for a week smh. Anyways I hope you enjoy these recipes and take some inspiration from them!

Chickpea flour scramble
1/2 cup chickpea flour
1 cup spring water (or distilled)
1 tsp onion powder
1 tsp sea salt (or to taste)
2 tsp Italian seasoning
1 tsp garlic powder
1 tbs nutritional yeast
A few flakes red chili (optional)
Waffle Batter
1/2 banana
1/2 cup almond milk
1/2 cup oatmeal
1.5 tbs agave
1 tsp flax seed
Dash of cinnamon
1 tsp vanilla
Banana Muffin
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon sea salt
1 cup coconut sugar (I used brown sugar instead)
⅓ cup organic coconut oil measure when solid, then melt it in the microwave
2 very ripe bananas
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
⅜ cup water
