Tired of tasteless Tex-Mex? I'm making fajitas today, and I'll share with you the one ultimate secret ingredient that will level up your Tex-Mex cooking forever!
Full recipe:
Heat a large cast iron over a high heat until screaming hot
Roughly chop one brown onion
Fillet and slice two bell peppers
Deseed and chop one Ramiro (or other large sweet) pepper
(Optionally) deseed and finely chop 2-3 chillis, according to your heat preference
Season with a grip of salt
Fry, over very high heat, in batches if necessary until coloured - about 3-5 mins
Slice two chicken breasts into thin strips
Season with a grip of salt
Fry over very high heat until coloured and almost cooked through, about 4-5 mins
Add the vegetables back to the pan
Add 1tsp tomato puree
Add 1tsp garlic puree (or sub in fresh garlic if you prefer)
Add 1tbsp ground cumin
Add 1dsp smoked paprika
Add 1-2tsp chilli powder of your choice
Add 1/2tsp onion salt (or celery salt)
Stir to combine, add more oil if it looks dry
Turn the heat down to medium-high, and allow to cook through - about 3-5mins
Meanwhile, warm some flour tortillas - a foil package in the oven or a microwave will do in a pinch
Prepare your accoutrements - salsa, cheese if you like, guacamole (you monster) - whatever you fancy
Once cooked, serve on a board, in the still-sizzling pan, with the accoutrements alongside so everyone can build their own fajita!
