DRY RUB INGREDIENTS
1 TBSP ONION POWDER
1 TBSP GARLIC POWDER
2 TBSP SMOKED PAPRIKA

1/4 TBSP BLACK PEPPER
1/2 TSP GINGER POWDER
1 1/4 TSP SALT
BINDER INGREDIENTS
1 TBSP APPLE VINEGAR
1/2 TBSP BROWN SUGAR

BBQ SAUCE INGREDIENTS
10 TBSP WATER
4 TBSP TOMATO PUREE
3/4 TBSP APPLE VINEGAR
3/4 TBSP BROWN SUGAR
2 TSP SMOKED PAPRIKA
1 TSP GARLIC POWDER
1/4 TSP ONION POWDER
1/4 TSP CAYENNE PEPPER
1/4 TSP BLACK PEPPER
1/4 TSP SALT
1 TSP BUTTER
1/4 TSP GINGER
-MIX 1 TBSP OF VINEGAR WITH 1/2 TBSP OF BROWN SUGAR TO MAKE A BINDER, MIX WELL AND KEEP IT ASIDE, THE VINEGAR ACTS AS A TENDERIZER.
PUT TOGETHER THE FOLLOWING INGREDIENTS TO MAKE A DRY RUB, 1 TBSP OF GARLIC POWDER, 1 TBSP OF ONION POWDER, 2 TBSP SMOKED PAPRIKA, 1/2 TBSP CAYENNE PEPPER, 1/4 TBSP BLACK PEPPER, 1/2 TSP GINGER POWDER, 1 1/4 TSP SALT, MIX WELL AND KEEP ASIDE .
-PAT DRY THE PORK RIBS WITH A PAPER TOWEL, PUT ON A FOIL PAPER RUB THE BINDER ON ALL SIDES OF THE RIBS THEREAFTER APPLY THE RUB ON ALL SIDE AND THEN WRAP WITH FOIL PAPER, REPEAT THE SAME PROCESS ON THE OTHER PORK RIB RACK. PLACE THEM ON AN OVEN TRAY, THE BONY SIDE FACING DOWNWARDS, BAKE IN A PREHEATED OVEN FOR 75MINUTES AT 180°C.
-IN THE MEAN TIME PREPARE THE BBQ SAUCE BY COMBINING, 10TBSP OF WATER, 4 TBSP TOMATO PUREE, 3/4 TBSP BROWN SUGAR, 3/4 TBSP VINEGAR, 1 TSP GARLIC POWDER, 1/4 TSP ONION POWDER, 1/4 TSP CAYENNE PEPPER, 1/4 TSP BLACK PEPPER, 2 TSP OF SMOKED PAPRIKA, 1/4 TSP SALT, STIR AND THEN ADD 1 TSP BUTTER, FOLLOWED BY 1/4 TSPS GINGER POWDER, MIX WELL AND LET IT COOK ON LOW FOR 15 MINUTES, TURN OFF THE HEAT.
-AFTER 75 MINUTES REMOVE THE RIBS FROM THE OVEN, UNCOVER THEM AND THEN RUB SOME OF THE BBQ SAUCE ONTO THE RIBS ON ALL SIDES, PUT THEM BACK IN THE OVEN AND BAKE UNCOVERED FOR 25 MINS.
-REMOVE FROM THE OVEN SERVE AND ENJOY WITH SOME EXTRA BBQ SAUCE, WITH A SIDE OF ANY OF THE FOLLOWING, CHIPS, POTATO WEDGES, OR A SALAD.
