1 pound boneless skinless chicken thighs (453g)
2 tablespoons olive oil (30 ml)
For the Marinade
2 tablespoons sesame oil (30 ml)
2 tablespoons Shoaxing wine or cooking sherry (30 ml)
2 tablespoons reduced sodium soy sauce (30 ml)
1 tablespoon cornstarch (10g)
2 tablespoons water (30g)
⅛ teaspoon kosher salt
For the Teriyaki Sauce
⅓ cup reduced sodium soy sauce (78 ml)
¼ cup brown sugar (50g)
3 tablespoons shoaxing wine or cooking sherry (45 ml)
2 tablespoons rice vinegar (30 ml)
1 tablespoon sesame oil (15 ml)
2 teaspoons ginger
2 teaspoons garlic
1 tablespoon cornstarch (10g)
1 tablespoon water (15 ml)
