So here's my favorite grilled chicken recipe. Feel free to modify this to your own liking! I recommend to remove the seeds from the serrano peppers. Let me know what you think in the comments!
1 Tbsp White Vinegar
8 oz (1cup) Pineapple Juice
1 Tbsp cooking Oil
2 Tbsp Fresh Lime Juice
2 Cloves of Garlic (Minced)
1/2 tsp Oregano
1/2 tsp Ground Pepper
1 Tbsp Serrano pepper minced (remove seeds)
Brine one whole chicken cut into parts with 4 cups water, add 4 tablespoons of salt. Brine for 3-4hours.
Then marinade chicken for 2-4hrs. Leave some marinade for basting.
Grill indirect heat, baste after 30minutes. At 50 minutes check temps.
Pull breasts after 165 F.
Pull wing, leg, and thigh at 180 F or until desired crispiness.
Sprinkle lemon on chicken before serving.
My ratio of oregano to ground pepper deviates from the online recipes, try 1/2 tsp oregano and 1/4 tsp of pepper.
