What Are Specialty Crops?

USDA defines “specialty crops” as fruits and vegetables, tree nuts, dried fruits and horticulture and nursery crops, including floriculture. Really, it’s a technical term for many of the fruits, vegetables, and other crops that many farmers (and gardeners!) grow.

The specialty-crop market is predicted to reach $2.2 trillion by 2030, including crops grown in regions that are new to them (“emerging crops”). With the craft-beer boom inspiring new hop farmers, for example, the hop market is expected to swell from $8.10 billion in 2023 to $11.20 billion by 2028.
