In this episode, we are playing with our Saskatoon berries! We have a bunker crop of SERVICEBERRIES (aka Saskatoon berries or Juneberries) this year & we’ve been busy picking & processing them!

We’ll show you 2 different recipes for how to make DELICIOUS SASKATOON BERRY JAM (1 is a KETO RECIPE!!), as well as how to freeze these delightful berries! (We like to freeze some to use in the winter for another batch of jam!)

Saskatoon Berry Jam with Regular Sugar:
Ingredients-4 cups Saskatoon berries, 3 cups sugar, 1/4 cup water, juice from half a lemon
-Clean berries. Remove any dried berries, stems, leaves, debris, and pests.
-Crush berries in pot with masher & heat (on medium) until the juices start to seep.
-Add sugar & water; bring to a boil (STIR CONSTANTLY).
-Once boiling, add lemon juice & bring to a boil again; cook, stirring frequently until thick (~15 minutes).
-Ladel into hot, sterile jars (leave 1/4” head space).
-Wipe the rim clean before placing lids and rings (straight from a hot water bath).
-Hand-tighten the rings.
-To can, boil in water bath 10 minutes.
*Makes just over 4 cups of jam.

Saskatoon Berry Jam with Erythritol (as a keto-friendly sugar-substitute):
Ingredients-6 cups Saskatoon berries, 3 cups sugar, 1⁄3 cup water, juice from 1 large lemon (~1⁄4 cup), 1 tsp vanilla extract
-Clean berries. Remove any dried berries, stems, leaves, debris, and pests.
-Throw berries in a pot and sprinkle with sugar-substitute.
-Add water & bring to a simmer, while crushing berries with the masher.
-When the sugar-substitute is completely dissolved, add lemon juice and vanilla extract.
-Bring to a boil, then simmer for 20 minutes or until thickened.
-Ladle into hot, sterilize jars, leaving 1⁄4" head space.
-Wipe the rim clean before placing lids and rings (straight from a hot water bath).
-Hand-tighten the rings.
-To can, boil in water bath for 15 minutes.
*Makes just over 6 cups of jam.

Enjoy these jams on bread or pastries, as a sauce for pancakes, or served over ice cream! The berries themselves are yummy straight off the tree, in pancakes (make them the same way you’d prepare blueberry pancakes), or you can dry or freeze them.
