CHEESY HAM & RICE SOUP
4 celery ribs, chopped
1 large onion, chopped
1/4 c. butter
4 medium carrots, shredded or chopped small
1/3 c. flour
1/2 tsp. pepper
2 c. half and half cream
8 oz. Velveeta cheese, cubed
4 c. cooked wild rice
2 2/3 c. cooked brown rice
3 c. cubed fully cooked ham
3 T. chicken bouillon granules
8 c. water
slivered almonds, optional (I always forget about this at the end)
Sauté celery and onion in butter until tender. Add carrots; cook and stir for 1-2 minutes. In a large kettle or Dutch oven, combine the flour and pepper. Gradually stir in cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Stir in the rice, ham, bouillon, celery mixture and water. Return to a simmer. Sprinkle with almonds if desired. Yield: 12 servings You may need to add more water the next day or less rice if you want in more soup like.
SPICY CROCKPOT CHICKEN SOUP
2 lb. chicken breasts
1 T. kosher salt
1 tsp. paprika
1 tsp. crushed red pepper flakes
1/2 tsp. thyme
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 tsp. rosemary leaves
8 c. chicken broth (home-canned or store bought or water with chicken bouillon)
1 large onion, chopped
3 c. of your favorite vegetables, chopped
8 oz. egg noodles (we like Kluski)
Mix spices and rub into both sides of chicken. Place in crockpot with a little water and cook on high 2 hours. Check often for temperature to reach 180 degrees. Take out chicken (leave drippings in crockpot) and shred or remove from bone depending on what kind of chicken you used. Add chicken, broth, onion and vegetables to crockpot; set to high for 3-4 hours until veggies are tender. Add egg noodles in the last 30 minutes and cook until ready to eat.
HONEY WHOLE WHEAT BREAD
1 1/3 c. milk
1/4 c. water
2 T. honey or sugar
4 tsp. butter
2 c. whole wheat flour
2 c. bread flour (today I used all purpose)
1 tsp. salt
1 1/4 tsp. yeast (I always use a little extra)
Place all ingredients in bread machine in order listed. Set to dough cycle. When cycle is complete, remove dough and place on lightly oiled surface. Knead a couple times. Shape into loaf and place in greased bread pan. Cover and let rise until doubled - usually 60 minutes for me. Bake at 350 degrees for 30-35 minutes or until crust is golden brown. Butter the top for a softer crust. We are a split family so I usually butter half and leave half the loaf plain.
