Today I'm sharing a video that almost never was. I was trying to film 3 different videos in one week and it got too confusing. I thought about deleting it all and starting over and then had an ah ha moment that I could just put it all together into a week in the life style video and I quite like how it turned out. See below for the cauliflower casserole and corn salad recipes.
Cauliflower Casserole
1 med. head cauliflower, broken into florets
1 c. sour cream
1 c. shredded cheddar cheese
1/2 c. crushed cornflakes
1/4 c. chopped green pepper
1/4 c. chopped sweet red pepper
1 tsp. salt
1/4 c. grated Parmesan cheese
Paprika
Place 1 inch of water in a saucepan; add cauliflower and bring to a boil. Simmer for 5-10 minutes until crisp-tender. Drain. In a large bowl combine sour cream, cheese, cornflakes, peppers and salt. Add cauliflower when done. Place in 2 qt. buttered casserole dish. Top with Parmesan cheese and sprinkle with Paprika. Bake at 325 degrees for 30-35 minutes. This was very good for a cauliflower love like me.
Corn Salad
2 can whole kernel corn, drained
1/2 c. green pepper, chopped
1/2 c. purple onion, chopped
2 c. shredded cheddar cheese
1 c. mayo
1 bag Chili cheese flavored corn chips, broken
Mix everything together except chips. Chill. Serve with chips on top so they don't get soggy if there are leftovers. I really liked this one too. The chips are necessary in my opinion.
