If you want to take your short rib game to the next level, try cooking Dino Short Ribs!
This quick video shows how I cut dino short ribs from a plate of beef short ribs. You can get these from any good butcher shop. We've already trimmed excess hard fat off the top of the ribs. You don't want to remove the nice, white soft fat because that's necessary for good cooking.

Some people may be screaming to use a boning knife, which is maybe a better pick, and what many butchers would use. This is a thinner and even more flexible knife. I know not many people have these at home, so I wanted to do the recipe with a knife that's very similar to a chef knife you may have at home.
