Please enjoy my recipe for home fried potatoes, they will go great as part of any breakfast or brunch.

Ingredients:
1/4 cup Olive Oil
5 Med/large potatoes cubed (1 per person)
1 Bell pepper (diced)
1 onion (diced)
Salt (to taste)
Black Pepper (to taste)
Onion powder (to taste)
Paprika (optional)

Directions:
Preheat skillet to medium/high heat. Add oil. Sautee onions and bell peppers for about 7 minutes. Add potatoes and (make sure oil is hot enough) cook until a crispy coating is achieved (about 10-15 minutes). Drop heat to medium/low and cover skillet. Cook for an additional 10 minutes or until desired softness is achieved.
