In the video today we will be making a classic British dessert called a Rhubarb fool. Perfect for when Rhubarb comes into season. The tart flavoured Rhubarb is cooked briefly with some sugar and then once chilled is mixed with whipped cream. This is a light and refreshing chilled summer dessert and is a simple dessert to make. I hope you enjoy this recipe as much as my family do. Did you know Rhubarb is actually a vegetable?
Ingredients 3/4 people or 2 large servings
450g rhubarb. (About 3 stalks)
50-60g sugar (depends on the tartness of Rhubarb , so important to taste)
Cup of whipped cream (200ml)
2 tbs of Greek yogurt.
Orange zest + 2 tbsp juice.
Simmer the Rhubarb in sugar, Orange juice/zest for 6 min with lid on until starts to get soft. Then extra 3 min until starts to break down. Try not to stirr too much or it will break up.
Strain and chill
Whip cream/then add Greek yogurt to stiff peaks , fold in rhubarb gently.
Add a few piece of Rhubarb on top then Drizzle juice just before serving.
These can be made a few hours before. If you choose to do this, don’t add the juice until just before serving. Or make everything and just put everything together before serving.
