Dough:
• Approximately 60 ml of lukewarm water (¼ cup)
• 10 g fresh yeast (⅓ ounce)
• 200 g spelt flour (1 ⅔ cups)
• 1 teaspoon coconut blossom sugar
• 1 teaspoon salt
• 2 tablespoons coconut oil
Vegetables:
• 1 eggplant
• 100 g red lentils (½ cup)
• 1 onion
• 2 cm ginger (about ¾ inch)
• 2 cloves of garlic
• 1 chili pepper
• 1 teaspoon salt
• 2 tsp Garam Masala
• 2 teaspoons sweet paprika
• 3 tomatoes
• 100 ml vegetable broth (⅓ cup)
• 1 tbsp coconut oil
• Parsley (to taste)
Bake:
• Bake the bread for 5 minutes at 225°C (437°F), convection oven.
• Bake the eggplant for 30 minutes at 250°C (482°F), convection oven.
