If I go to "settings" here. If I go to Apps and if I go to Messages Notifications and if I go to this option Notification categories you can see there is the name of a contact under conversations. Generally you won't see this kind of contact name under Notification categories in Messages. Now if you want to remove this what you do is tap on this contact here and scroll down there is an option here "set this as not a conversation". Tap on it. Now you see under Notification categories the contact name is removed.
