20g(4Tbsp) Melted unsalted butter
20g(2Tbsp) Cornstarch (potato starch is possible)

Whole garlic (as much as you want) + 1Tbsp olive oil
Parsley
10g unsalted butter (when baking for the second time)
✤ TIP
Since salt was added when boiling, it is seasoned without adding more. Yes.
Garlic and herbs will burn if you roast them from the beginning, so add them when roasting them a second time.
Set the temperature lower in the air fryer.

= 2 cheeses, 3 basics (11x5.5cm)
✤ Ingredients
560g Potatoes
3g(1tsp) Salt
60g(6tbsp) Cornstarch
2 tbsp Cooking oil (for frying potatoes)
✤ TIP
The reason for rinsing in water is that potato starch that absorbs moisture in the potatoes is moist and not crispy.
If you want to eat it crispy, be sure to use cornstarch (no flour)
You can add your favorite ingredients such as pepper or red pepper powder in addition to salt.

[Potato Croquettes]
= 42 complete
✤ Ingredients
570g peeled potatoes
60g Unsalted butter
40ml Milk (adjust depending on the moisture content of the potatoes)
4~5 pinches salt (adjust to taste)

Flour (any type)
Breadcrumbs
Cooking oil
✤ TIP
Potatoes should be frozen for about 2 hours to make them easier to cut. (It may vary depending on the performance of the refrigerator)
Potatoes are more fluffy and delicious when steamed than when boiled in water.
I recommend steaming them in a steamer or using the steaming function in an electric rice cooker for 20 minutes.

You can also fry them in an oven or air fryer with oil, but the texture will be different.

360g potatoes (2 medium-sized)
8g Parmesan cheese (powder is also possible)

10g unsalted butter
1Tbsp cooking oil
2 pinches salt
3g(0.5Tbsp) Chili powder
4g(0.7Tbsp) Curry powder
2Tbsp Water
✤ Ingredients and topping sauce
10 6-inch tortillas (15cm)
Mozzarella cheese
Sriracha sauce or hot sauce
Tomato pasta sauce (or pizza sauce)
✤ TIP
The potatoes are measured when they are raw. - If you don't have Parmesan cheese, substitute with salt. (1 tsp)
If you don't have tomato sauce, you can substitute with ketchup.
If you're making it for kids, you can omit the chili powder.
I added chili powder or Sriracha, but it's not spicy. It's just enough to balance out the greasiness.
It's also delicious if you add canned corn to the potato batter.
