Ingredients

🍰Shortcrust pastry:
5 egg yolks
a pinch of salt
60 g (4 tbsp / 2 oz) sugar
70 g (4 tbsp / 2.5 oz) yogurt
110 g (one piece) melted butter
300 g (2 heaped cups / 10.5 oz) flour
1 teaspoon Baking powder

Baking pan 18X28 cm

🍒Cherry jam:
500g (1 pound) frozen cherries
100 g (1/2 cup / 3.5 oz) sugar
70 g (6 tbsp / 2.5 oz) corn starch
150 ml (3/4 cup / 5.2 fl oz) water
Heat and stir until well combined

Put the jam into the cake base

🧁Meringue:
5 egg whites
a pinch of salt
1/2 tsp cream of tartar
150 g (3/4 cup / 5.2 oz) sugar
Beat until stiff peaks form, about 7 minutes

Assemble the cake as shown in the video
Bake in a preheated oven for 15 minutes at 180 °C / 350 °F

Ingredients:
250 g (9 oz) cookies (Lotus)
70 g (4 tbsp / 2.5 oz) melted butter
Baking pan 20 cm / 8 inches

20 g (3 heaped teaspoons) gelatine
150 ml (2/3 cup / 5 fl oz) milk
Mix, set aside, then melt just before mixing

600g (21oz) ricotta
150 g (2/3 cup / 5 oz) sugar
150 g (2/3 cup / 5 oz) yogurt
Mix and add gelatin

Assemble the cake as shown in the video
Place in the fridge for 3-4 hours

Raspberry jam topping:
300 g (10 oz) raspberries
30 g (2 heaped tablespoons / 1 oz) corn starch
30 g (2 tbsp / 1 oz) sugar
50 ml (3 tbsp / 1.7 oz) water
Heat and stir to make jam

🍰Dough:
120 g (one piece and one tablespoon) soft butter
100 g (1/2 cup / 3.5 oz) sugar
2 eggs
240 g (1 2/3 cups / 8.5 oz) flour
5 g (1 tsp) baking powder
60 ml (3 tbsp / 2 fl oz) milk

Baking pan 18X28 cm
Bake in a preheated oven at 180 °C / 350 °F for 20 minutes

🍦Cream:
400g (14oz) ricotta
3 egg yolks
30 g (2 tbsp / 1 oz) sugar
30 g (2 heaped tablespoons / 1 oz) corn starch
1 tsp vanilla
3 egg whites
a pinch of salt
120 g (2/3 cup / 4 oz) sugar

🍒🫐Berry jam:
300 g (10.5 oz) mixed berries
50 g (3 tbsp / 1.5 oz) sugar
20 g (1 heaped tablespoon) corn starch
60 ml (3 tbsp / 2 fl oz) water
Heat and stir until thickened

💛Sprinkles:
60 g (1/2 stick) butter
60 g (4 tbsp / 2 oz) sugar
120 g (3/4 cup / 4 oz) flour

Assemble the cake as shown in the video
Bake for 50 minutes at 160 °C / 320 °F

Allow the cake to cool completely
