🍦Vanilla pudding cream:
2 eggs
50 g (4 tbsp / 1.7 oz) corn starch
150 g (3/4 cup / 5 oz) sugar
1 tsp vanilla
500 ml (2 1/2 cups / 1 pint) milk
30 g (1 tbsp) butter
Allow the cream to cool completely
200 ml (2 cups / 7 fl oz) sweetened cream (30%)
Beat until firm peaks form
Mix vanilla sauce and whipped cream
🍰Chocolate pastry:
200 ml (2 cups / 7 fl oz) water
160 g (1 1/2 stick / 5 oz) butter
a pinch of salt
Let the butter melt
260 g (1 3/4 cups / 9 oz) flour
maximum moisture evaporation
Let the dough cool
Add 6 eggs one at a time
Make 2 rounds of 20 cm / 8 inches
Bake for 40 minutes at 180 °C / 360 °F

Bake for 15 minutes at 180 °C / 360 °F
🍋Mousse:
10 g (1 1/2 tsp) gelatine
100 ml (1/2 cup / 3.5 fl oz) water
Mix and set aside
Melt before adding to the lemon cream

Peel of 1 lemon
Juice of 2 lemons
20 g (1 tbsp) butter
Add melted gelatin
200 ml (2 cups / 7 fl oz) sweetened cream (30%)
Beat until firm peaks form
Add lemon cream to the whipped cream
Mix well

Place in the refrigerator for 3-4 hours to stabilize
🍦Merengue:
150 g (3/4 cup / 5 oz) sugar

Make syrup
2 egg whites
a pinch of salt
Start by beating the egg whites
Add the syrup by pouring it thinly
