Absolutely bullying Sir Gideon Ofnir at level 1 (no weapon upgrades, hitless, solo) - Elden Ring
Sir Gideon Ofnir the All-knowing is a hilarious boss. He uses only magic and has a ton of impossible to dodge spell combo's. That isn't even an exaggeration as far as I've experienced, he will often create impossible situations for you in a head to head fight. Gideon doesn't fight fairly, and neither can you. You could poison him from out of sight and cheese the encounter, but I opted for a more personal strategy: just don't let him do anything. Try to back him into a corner if you can. Use a poke style halberd which will keep him stun-locked appropriately with consecutive R1's, with the dragon halberd being the strongest weapon of that style. Boost the damage any way you can, and pray he doesn't get too many opportunities to attack! You will invariably die a lot even with a perfect understanding of the strategy and his moveset, that is just the nature of the Gideon fight.

Radagon's Soreseal (found in Fort Faroth in Caelid behind a giant rat)
Ritual Sword Talisman (found in Lux Ruins in the Altus Plateau region after defeating the boss)
Lightning Scorpion Charm (found behind a stonesword key fogwall in the Wyndham Catacombs in the Mt Gelmir region)
Lantern (purchased from a nomadic merchant on the west coast of the Weeping Peninsula by the Isolated Merchant's Shack site of grace)
Lightning-Shrouding Cracked Tear for the Flask of Wondrous Physick (dropped by an Erdtree Avatar in the Liurnia of the Lakes region)
Greenspill Crystal Tear for the Flask of Wondrous Physick (found next to the Minor Erdtree in Limgrave's Mistwood)
