Hello, this is Joconde!

In this video, I made a type of pumpkin candy. It's made by simmering pumpkin in syrup and then drying it. This treat is perfect for adding to pumpkin pound cakes or other pumpkin-based pastries, and although it took a while to make, it’s a fantastic snack on its own! It’s fun to grab a piece to enjoy as you pass by. I tested different types of pumpkin, including Cinderella pumpkin, kabocha, and butternut squash. Both Cinderella pumpkin and butternut squash worked well, but kabocha was too soft and became mushy right from the start. I had high hopes for kabocha because it’s delicious, so that was a bit disappointing.

But the Cinderella pumpkin candy turned out amazing, so I hope you’ll give it a try! Watch the video and challenge yourself to make it! Thank you.

Ingredients:

1 kg pumpkin, cut into 2 cm cubes
1 cinnamon stick (about 10 cm long)
5-6 cloves
1 star anise
Zest and juice of 1 orange
Zest and juice of 1 lemon
420 g sugar
A mixture of powdered sugar and cornstarch in a 1:1 ratio (as needed)
