Vegan Sushi Bowl
For the bowl:
4 cups of cooked quinoa (1 ½ cups uncooked)
4 tbsp coconut aminos
3 tbsp apple cider vinegar
1 tbsp date syrup
1 tsp grated ginger
½ cup purple cabbage, shredded
½ cup grated carrot
½ cup red pepper, diced
½ cup cucumber, diced
1 cup mango, diced
¼ cup toasted sesame seeds
1 avocado, diced
4 Nori sheets, cut into smaller pieces
For the spicy mayo:
½ cup HV mayo • Healthy Vegan Easy Oil-free, Nut-free...
1 tbsp date sweetened sriracha
(You could use any mayo and Sriracha sauce you prefer)
Directions
Prepare Quinoa:
Combine coconut aminos, apple cider vinegar, date syrup, and grated ginger. Add mixture to the cooked quinoa and mix to combine.
Add Veggies:
Add all the diced vegetables and mango to the quinoa. Mix to combine. Top with spicy mayo and toasted sesame seeds. Enjoy this by adding some sushi mix to nori pieces or crumble nori sheets and add to the sushi bowl.
