Chocolate-Chip Cookie Dough

1 1/3 cup (1 15 oz. can) cooked chickpeas
4 pitted medjool dates
½ cup almond flour (for nut free use oat or tiger nut flour)
2 tablespoons cashew butter (or other nut/seed butter)
1 tsp vanilla extract
1-2 tbsp of plant milk, as needed
¼ cup date sweetened chocolate chips

Directions:

Add chickpeas, dates, and vanilla extract to the food processor and blend until almost smooth adding small amounts of plant milk as necessary. Add almond flour and blend into a cookie dough consistency. If the mixture is too wet add more almond flour, if too dry add more plant milk. Mix in chocolate chips. Enjoy!
