Chutney is a spicy, sweet and sour sauce with small pieces of fruit. I have been preparing it from our greengage and peaches according to this recipe for years and use it in a variety of ways, for example to spice up salad dressings and sauces, for marinating, in yoghurt sauces, or as a seasoning ingredient in vegetarian dishes. This chutney tastes delicious with cheese, meat or fish and gives many dishes that certain something with its piquant and fruity note.

Ingredients:
400 g peaches (pitted and weighed)
1 kg greengages or mirabelle plums (pitted and weighed)
3 medium onions
60 ml white vinegar 5%
3 tablespoons mustard seeds
1 tsp ground coriander
1 tsp turmeric powder
1/2 tsp salt
250 g whole beet sugar
3 tsp agar agar
