When we weed the vegetable garden, we can discover a variety of grasses and herbs. Including the common purslane, which can be found almost everywhere. It is a healthy, vitamin-rich wild vegetable that tastes delicious and is easy to harvest.

So instead of cursing the evil, evil weeds, let's be happy about the harvest at no cost and take the Purslane with us into the kitchen!

Using the example of the Tuscan bread salad Panzanella, I will show how Common Purslane is processed.
Purslane tastes refreshingly sour and slightly salty. It is easy to digest and, as a medicinal plant, helps with heartburn, indigestion and stomach problems.

Ingredients for the panzanella:
✅️ stale white bread or rolls, e.g. ciabatta
✅️ Cucumber
✅️ Paprika
✅️ Tomatoes
✅️ Onions
✅️ Purslane
✅️ Wine vinegar
✅️ Olive oil
✅️ Salt
✅️ some water
