P stands for Program Mode. It's main function is to get the "exposure" technically correct for the photographer first time round.
However, unlike automatic mode then Program allows the photographer to quickly chose between a combination of Apertures and Shutter Speeds.
This is of great help when you " Quickly " want to access different apertures and shutter speeds with out worrying about the "exposure" side of things, which is what we worry about whilst working in Manual Mode.
In the video Strober attempts to explain to you how the program mode does function on a typical DSLR.
Also remember that Program Mode also allows you to change such settings such as Exposure Compensation, White Balance, Flash Power etc... which is why Strober says that he see's P Mode as being the half way mark between where Automatic mode and Manual Mode does meet.

PS: It is in correct that P stands for Professional, this is a myth and should not be used to refer to the program mode of a DSLR
