You can go to one of two places; if you tap on the app icon, the 16 tiny white squares on the bottom right of your home page {it is actually on the bottom of every page or your Galaxy S III}, you will find your email, or gmail, folder there.

For instance, if you have several email addresses, or maybe one on gmail and perhaps another on aol, then tap the email folder; this is where all of your combined email is.
If you have only a gmail account, tap on the gmail folder; are you familiar with the little half page icon that is directly to the left of your home button?
i think so; is that the same place as the back arrow button which is on the right side of the home button?
yes, that is correct; when you tap on that half page icon, it will bring up a menu; one of the options is settings; tap on settings; you will now be at a page with your email addresses.
Now tap on the actual email address; this will bring you to the common settings menu; there you will see an option for signature; tap on the word signature, and type away!
When you are finished, click done in the top right corner of your page.
If you have more than one email address, just repeat those same steps until each email address has the signature you would like to have at the end of your emails. you can make each email have its own signature if i want. Galaxy S III rocks!
