Ingredients:
• 5 - 6 piece of artichoke bottoms or hearts
• 2 cups rice (Baldo, arborio or similar medium grain varieties)
• 1 large onion (or 2 medium)
• 1/2 cup extra virgin olive oil
• 1 tbsp pine nuts
• 1 lemon (zest and 1/2 lemon juice) + extra lemon juice for soaking the artichokes
• 2 tsp dried mint
• 1/2 tsp black pepper
• 2 tsp salt
• 1/2 cup chopped fresh dill
• 1/2 cup chopped green onions
Instructions:
1. Soak the rice 30 mins in warm salted water
2. Wash and rinse the rice with cold water until the water runs clear, drain and set aside
3. Finely chop the onions and dice the artichokes into large cubes
4. Transfer the artichokes in a bowl filled with water and add a juice of a lemon
5. Heat up 1/2 cup olive oil in a wide pan, add the chopped onions
6. Cook and stir for 5 mins over medium fire until the onions are soft
7. Add the pine nuts, stir and cook 5 more mins until the pine nuts are slightly roasted and onions caramelized
8. Drain the artichokes, add into the pan, stir and sautee for 10 mins until halfway cooked
9. Add 2 tsp dried mint, 1/2 tsp black pepper, 2 tsp salt and the drained rice
10. Stir and fry the rice for few minutes until translucent and fragrant
11. Zest 1 lemon and add the zest and the juice of 1/2 lemon, 3 cups hot water.
12. Gently stir, bring to a simmer and cook covered for 15 mins over lowest heat
13. Finely chop the dill and green parts of 2 green onions (1/2 cup chopped)
14. Once the liquid is fully absorbed, switch off the heat, add the green onions and stir in
15. Cover with a kitchen towel and close the lid, let it rest for at least 30 mins
16. Stir in the chopped dill and serve at room temperature or slightly warm. Enjoy!
